Raw foods (such as Sushi, often made of raw fish) are generally the best for preserving enzymes and other nutrients, as long as the foods are fresh.

While sushi itself is not a part of a low-carb diet or lifestyle due to the amount of carbohydrates in the rice, sashimi is perfectly fine since it is only fish without rice or nori.

While almost all fish has no carbohydrates or close to none, there are a few items that contain some, such as surimi (imitation crab meat) which is usually found in rolls.

Omega-3 fatty acids are not only a nutritional requirement for humans, but also a fat that shows promise in remediating many ailments from which we suffer for lack of this essential fatty acid in our modern diet, including cardiovascular disease.

The seaweed wrap used in rolls (maki), called nori, is rich with essential vitamins and minerals. Wasabi and ginger both have antibacterial qualities, and ginger is widely regarded as aidign digestion and improving circulation.
