Vitamin K actually refers to a group of vitamins with similar structures. These are vitamin K1, known as phylloquinone or phytonadione, and vitamin K2, known as menaquinones, MK. Vitamin K1 is synthesised by plants, vegetable and algae and has a low bioavailability.
Vitamin K2 is synthesised by gut bacteria and has a high bioavailability. Vitamin K2 can be found in fermented foods, particularly cheese and natto, Japanese fermented soybeans. Vitamin K2 is subdivided into short chain menaquinones or long chain menoquinones.
Vitamin K plays an important in the synthesis of a group of proteins called Gla-proteins. Gla stands for Gamma-Carboxy glutamate and those proteins are important in the utilisation of calcium.
Vitamin K is therefore important in the relation to blood clotting and bone health, and more recently has been identified as playing a crucial role in arterial health. Here, the deposition of calcium in the blood vessel walls is prevented by the action of Matrix Gla protein, which is activated by Vitamin K2.
